  • White Boxed Cake Mix
  • Coconut Key Lime Instant Pudding
  • 2 Eggs
  • ½ c Vegetable Oil
  • 1 c White Chocolate Chips
  • ½ c Sweetened Coconut Flakes
  • 1 Lime
  • 3-5 drops Green Food Coloring (if desired)
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine dry cake mix, dry instant pudding mix, eggs, and vegetable oil. Mix well.
  3. Add the zest and juice from one lime. Add 3-5 drops of green food coloring. Mix well.
  4. Add white chocolate chips and coconut. Mix until they are combined well throughout the batter.
  5. Line a baking sheet with parchment paper or a baking mat. Form dough into 1½ inch balls and place 1-2 inches apart on parchment lined cookie sheet. Top with a few extra coconut flakes and press 3-5 white chocolate chips into the top.
  6. Bake 12 minutes. Allow to cool on cookie sheet for 3-5 minutes, then transfer to a wire rack to cool.
