Caramel Apple Cookies
If your mouth starts watering at the mere mention of caramel and apple together, these are for you! Your kitchen will be filled with the aroma of fall as these bake. On the outside these Caramel Apple Cookies look kind of plain, but the surprise is on the inside.
All the flavor of a caramel apple packed inside a neat cookie package. Well, not too neat. There is that gooey, sticky center to deal with. Caramel Apple Cookies
To make these delicious fall cookies you’ll need butter, sugar, salt, packets of apple cider mix, eggs, cinnamon, vanilla, baking soda, baking powder, flour, caramel squares, and parchment paper or a silicone baking mat.
Cream together butter, sugar, salt and all 10 packets of apple cider mix. Mix until batter becomes whipped or kind of “fluffy.” Beat in eggs, cinnamon and vanilla extract.
In a separate bowl, whisk together flour, baking soda, and baking powder.
Add flour mixture to batter in small batches and mix together until combined.
Scoop out about 2 tablespoons of dough and form into a ball. Place on parchment paper lined pan and flatten. Place caramel into the center.
Seal the dough around the caramel square. Place dough balls 2-3 inches apart on baking pan. Bake 12-14 minutes or until lightly brown around the edges.
Gently slide the parchment paper with cookies off the hot pan onto the counter or a silicone baking mat. Cool and allow to slightly firm up, but still remain warm. After cooling a few minutes, flip cookies over to finish cooling upside down on the parchment paper.
These cookies are best served slightly warm while the caramel is nice and gooey.
If you’re eating these after they’ve completely cooled, try popping them in the microwave about 10 seconds to reheat. Yum!

- 1 tsp Vanilla

- Preheat oven to 350 degrees
