This BBQ Chicken Flatbread Pizza is quick enough to make for lunch or a weeknight dinner. With barbecue sauce, chicken, cheese and lots of ways to customize your flavors, the whole family will be excited for pizza night!

BBQ Chicken Flatbread Pizza

This recipe for BBQ Chicken Flatbread Pizza combines everything I love about easy weeknight dinner recipes. It’s a great way to use leftover chicken and turn it into an entirely new meal. In the instructions I’ve included directions on how to bake the chicken. However, if you start with leftover chicken you can have this on the table in under 15 minutes!

The recipe below is a basic recipe that is great for kids or picky eaters (we all have some in our family, right?). There are all kinds of things you can add to the pizza to up the flavor such as red onions, cilantro, different kinds of cheese, and even pineapple. Add extra toppings to half of the pizza or make one for the kids and another for the adults. See, it really is the perfect weeknight dinner! Lets make it!

Ingredients for BBQ Chicken Flatbread Pizza

  • Olive oil
  • Chicken breasts
  • Salt and pepper
  • Artisan flatbreads
  • Barbecue sauce
  • Shredded Colby Jack cheese
  • Oregano

How to Make BBQ Chicken Flatbread Pizza

If you’re starting with leftover chicken you can skip this part, but here are the instructions for baking the chicken breasts if you don’t have any leftover chicken on hand.
Preheat the oven to 375 degrees.
Drizzle about a teaspoon of olive oil on the baking pan or use a nonstick baking spray.
Place chicken breasts on the baking dish, drizzle with a teaspoon of olive oil, and sprinkle salt and pepper on both sides.
Bake chicken breasts about 30 minutes or until the internal temperature reads 165 degrees.
Allow to cool and then use 2 forks to shred the chicken breasts.

Spread your favorite barbecue sauce on each of the artisan flatbreads. Be sure the flat side is down and the textured side is facing up.
Cover each flatbread with a generous amount of shredded chicken.
Add a layer of shredded cheese on top of the chicken.
If you want to add additional toppings you can add them before or after the layer of cheese.
Bake directly on the oven racks or on a pizza baking stone for 7 minutes. For a crispier crust you may want to cook it a little longer.
Drizzle a little more barbecue sauce on top after cooking.
Remove from the oven and cup into squares. Enjoy!
